This sandwich came about on one of those nights where I came home to almost no food in the fridge, unsure of what I was going to do for dinner. After a little scrounging around, and a lot of "What the hell could I possibly do with this?," it hit me. Bread, avocado, egg, and a block of Parmesan? Perfect.

Ingredients

  • slices whole-grain bread
  • Haas avocado
  • eggs, fried
  • Freshly grated Parmesan
  • Black pepper, to taste

Directions

Put the bread in the toaster. When it's nice and brown, spread a thick layer of avocado on each side. (You'll probably have some leftover, so you can just snack on that when you're done.) Top with the eggs and cheese, and season with pepper, to taste.

Avocado Shopping Tip

Avoid very soft avocados; choose those that yield slightly to finger pressure.

Avocado Cooking Tip

Avocados oxidize quickly; use lemon juice to keep the flesh from turning brown.
