Apple Pumpkin Cake

The secret to this moist and delicious apple cake is protein-rich beans; use a can of Bush's baked beans for a sweet treat that's quick and easy to make. Top this cake with a dusting of powdered sugar, whipped cream, or cream cheese frosting for the perfect finish.

Notes

Additional Method: Use cupcake pans lined with baking cups. Fill each space two-thirds full with cake mixture. Bake at 350 degrees F for 12 to 15 minutes, or until wooden pick comes out clean. Top with whip cream or cream cheese frosting, if desired. Yields 2-3 dozen. 

Ingredients

  • can (16 ounces) BUSHS Country Style Baked Beans
  • package (16.25 ounces) spice cake mix
  • large eggs
  • ½  Cup  applesauce
  • can (15 ounces) pumpkin puree
  • Whipped cream or cream cheese frosting, for topping

Directions

Remove the bacon from the beans. Pour the beans into a blender and puree. Set aside.

Combine cake mix, ¾ cup pureed beans (the remaining puree isn't needed for this recipe), and 3 eggs in large bowl. Mix well using a spatula.

Add the applesauce and pumpkin. Mix well until the ingredients are combined.

Spoon the batter into greased 9- by 13-inch cake pan. Bake at 350 degrees F for 30 to35 minutes, or until wooden pick inserted near center comes out clean.

Cool the cake in the pan.

Top with whip cream or cream cheese frosting, if desired.
