Ingredients
  • 1 cup wheat berries, cooked according to package directions
  • 2 handfuls baby spinach
  • 1 apple, sliced
  • 1/4 cup pecans
  • 1/3 cup blue cheese
  • 2 tablespoon herb-infused olive oil (or olive oil with a rosemary sprig)
  • pinch of kosher salt
  • 2 tablespoon maple syrup
  • 1 small head radicchio, cored and cut into bite-sized pieces
Directions
  1. Toss the all of the ingredients together except for the radicchio in a large bowl. Meanwhile, heat a pot over medium-high heat. Add the radicchio and cook until brown. Combine the radicchio with the rest of the ingredients. Serve.
