Hello November! I can’t contain my excitement because Thanksgiving is right around the corner {a little over 2 weeks away, but who is counting} and I get really cheesy around this time so you’ve been warned.

While I don’t live in an autumn paradise, no fall foliage here in South Florida {I kid you not as I type this I’m wearing shorts and flip flops} – I still feel a sense of renewal around this time and these Pumpkin Bread Mini Bites filled our home with the aromas of fall so I felt fine with the fact that we had the AC on. 

The recipe for these Pumpkin Bread Mini Bites is very easy partly because I use a pre-made Pumpkin Bread Mix … gasp! Seriously, though you can make your own from scratch if you’d like but we were at Costcos a few weeks ago and sampled these. The kids begged for the huge box and why not have amazing Pumpkin Bread in under 45 minutes?!

No one will know that these are ‘semi-homemade’ and if they do who cares lol. I added a few key ingredients to spruce these up and made a cream cheese glaze {from scratch in under 5 minutes}.  These are great to serve on Thanksgiving day you can make them in mini muffin tins like I did or in a loaf pan and slice up thick. I even love the idea of making french toast with these {thanksgiving day breakfast anyone?!}

Save Recipe Print For the pumpkin bread

  1. 1 box of pumpkin bread mix {ingredients listed on the box}
  2. 1/4 tsp of nutmeg
  3. 1/4 tsp of cinnamon
  4. a pinch of salt
  5. 1 tsp of vanilla
  6. 3 tsp of cream cheese
  7. 4 tsp of pumpkin puree

For the cream cheese glaze

  1. 8 oz of softened cream cheese
  2. 1/4 cup of condensed milk
  3. pinch of nutmeg + cinnamon
  4. 1/4 tsp of vanilla

Instructions

  1. Follow the box directions for your pumpkin bread and add the extra ingredients you will have to add about 10-15 more minutes of bake time.
  2. For the cream cheese glaze: Mix together all the ingredients once the bread is cooled down pour the glaze over and allow it to set.

Notes

  1. Tip: Great as french toast, simply bake in a loaf pan. Allow to set out so it can harden {a day or two is optimal}. Cut thick slices and dip in french toast batter and cook on a buttered pan. Pour some maple syrup and a little cream cheese glaze over the top for a decadent breakfast.
