The New School has fairly regularly posted weekend event guides for Portland and the surrounding areas for some time now but we are changing it up. From now on we will post an event guide for the week ahead rather than limiting it to just that weekend you can consult our article right up until the next Friday. Belgian Blond
Puree of celery root and pear
Red peppercorn crème fraiche.
Extra virgin olive oil

-I really love the pear and peach aromas and flavors from this Belgian yeast strain. I am doing this soup to compare pear and the flavor of celery root with the beer while contrasting and adding a rich, savory and peppery aspect with house-made crème fraiche, red peppercorn and extra virgin olive oil.

White Wedding Belgian IPA
Butternut squash risotto
Roast brussel leaves
Emmenthaler
Shaved walnut
Walnut oil

-I am not usually a white IPA fan but Mazama killed it on this beer. A great American IPA and Belgian wit combo with a fantastic spice blend and a good dose of hops. This is a risotto similar to one of the first I did at Wildwood. The slight residual sugars and fall spices pair well with butternut squash. To complement the hop profile I added roasted Brussel sprout leaves and walnut for a bitter, nutty touch. The Emmenthaler is for balancing flavor and the bright, crispness of this beer, a little funk and salt.

-To me this beer screamed pork belly. It's my favorite protein. I made a rub out of the same spices used to spice the beer. I tried to mimic the flavors and sweetness of the beer with fennel, orange and savory carrot. Gin shares a similar spice blend so I made a gin gastrique to add acidity and sweetness.

-A play off of many classic osso bucco dishes I have had. Using the porter and stock to braise lamb shoulder which lends well to the coffee/chocolate flavors in the beer. Creamy grits instead of, more classically, polenta since Gordon will be with me (Mississippi native). Sherried red onion to add a bit of texture and acidity. Oil cured olive and orange gremolata for a twist on a classic sauce also meant to tie back into the flavors of the porter and the lamb.

Kenton IPA Widmer Collaborator Release Party
