Ingredients
  • 1 rotisserie chicken, skin removed and chopped
  • 1 stalk celery, chopped
  • 1/2 small onion, chopped
  • 1 teaspoon porcini poultry r.u.b.s.*
  • 1/2 teaspoon fresh thyme
  • 1/2 cup mayonnaise
  • dash of sea salt
  • iceberg or bibb lettuce
  • oat or multi-grain bread
Directions
  1. Place chicken in a medium size bowl and add the remaining ingredients. Mix gently and season with salt to taste. If too dry, add a little more mayonnaise. Serve on your favorite grainy bread with lettuce.
