Patterson, who has been promoting his new book with videos of him cooking with foraged lichen, is known for his two-Michelin-starred restaurant in San Francisco that focuses on seasonal ingredients with innovative preparations.

Meanwhile, Gabrielle Hamilton of New York City's Prune will join the discussion with her award-winning memoir Blood, Bones & Butter: The Inadvertent Education of a Reluctant Chef.
