White Truffles On Parade At Eataly's Annual Tartufo Pop-Up Restaurant

Truffle season is back — that time of year when you you're willing to pay top-price for a chance to nosh on delicious fungi that pigs dug out of the ground.Eataly is celebrating truffle season by bringing back their pop-up restaurant Il Tartufo, opening November 2 in the New York City location, temporarily in place of their lunch spot, Pranzo.

Eataly's chefs have partnered with Italy's top truffle producer Urbani, to create dishes centered on both black and the rarer and more expensive white truffles.

A few of the dishes you'll be able to taste at the pop-up include Carne Cruda e Topinambur (Italian style steak tartare with sunchokes, sea salt, and extra virgin olive oil); Pane, Burro e Acciughe (toasted housemade rustico bread, white truffle butter, and salt-cured anchovies); and Insalata d' Inverno (roasted squash with lentils, arugula, stracchino di capra, and black truffle vinaigrette).

A special Chef's Table truffle dinner will be offered on November 21, featuring four wine-paired courses.
