Celebrity Chef Jonathan Waxman Is Opening Restaurant In Ghirardelli Square

James Beard award-winning celebrity chef Jonathan Waxman (Barbuto in New York and Adele's in Nashville), is returning to his California cuisine roots with the opening of Waxman's in San Francisco's Ghirardelli Square.

The new restaurant, which Waxman is opening with his business partner, restaurateur Howard Greenstone, will highlight fresh and local Bay Area ingredients and Italian cuisine in a "Cal-Ital" fusion style.

The restaurant will be housed in a cavernous 6,500 square-foot former warehouse with high ceilings, exposed brick walls, and expansive windows overlooking the square.

"When I was growing up, Ghirardelli Square was one of the quintessential meeting places for San Franciscans," Waxman said in a statement.  "After introducing California cuisine to New York City, I am humbled to come back to my home state and be part of the revitalization of Ghirardelli Square."

The menu at Waxman's will include Californian seafood and vegetable-driven dishes like Petrale sole crudo with avocado and orange salad, wood-roasted steelhead with treviso and romesco salsa, and shaved carrots with watermelon radish and market lettuces alongside classic pasta dishes like  gnocchi with turnips, radishes, thumbelina carrots and green garlic; and risotto di mare with mussels, squid and Dungeness Crab.
