Morimoto On Tribeca Canvas And What's Next

We recently caught up with Morimoto at the screening for Kikkoman's new film Make Haste Slowly. Aside from his work with Kikkoman, the Iron Chef has also recently opened a new restaurant in New York City called Tribeca Canvas, which is notable for not serving Japanese cuisine. Morimoto explained, "It's no food from Japan — no sushi, no sashimi... A lot of people think about me as a sushi master... but I try to do new things."

He also has a restaurant in Hawaii opening soon that is also called Morimoto: "Everything is the same restaurant called Morimoto, but the menu is different and the design is different." He says the feel will be different because of the particular Asian culture that already exists in Hawaii, as well as some of the produce that is unique to the islands.
