More and more people are becoming more health conscious about their food choices as we become more knowledgeable about our food process and where it comes from. I created this recipe for those following a Paleo or Gluten Free diet or anyone in the mood to try something new.
•1 cup Almond flour
•1/4 cup coconut flour
•1/2 teaspoon sea salt
•1 teaspoon baking soda
•1/4 cup organic honey
•1/4 cup coconut oil, melted
•juice and zest of lemon
•1 tablespoon poppy seeds
1.Preheat the oven at 350 degrees.
2.In a medium size bowl sift together the almond flour, coconut flour, sea salt, and baking soda.
3.In a large bowl whisk together the honey, coconut oil, eggs, lemon juice, lemon zest and poppy seeds. Add the dry ingredients into the wet ingredients and mix just until combined, do not over mix.
4.Scoop the mixture into greased mini muffin cups or liners if using, about 1 tablespoon per muffin cup.
5.Bake for 10 — 11 minutes or until done. Let cool and enjoy!
