If you're really going to do it big for the Mayan apocalypse, do it with the right tequila. Chinaco Blanco Tequila (named after Chicano warriors who defended Mexico in the 1800s) is 100 percent agave tequila from Tamaulipas, Mexico; its bouquet includes notes of pear, quince, dill, lime, and aloe. To keep with traditional Mayan ingredients, the cocktial uses a touch of Xtabentun, an anise liqueur of Mayan origin from the Yucatán Peninsula.

Ingredients
  • 1/2 ounce chinaco blanco
  • 1/2 ounce xtabentun
  • champagne, prosecco, or cava to top
Directions
  1. Add the first two ingredients, and fill stemmed flute with prosecco, cava, or other dry sparkling wine. Garnish with a Luxardo Cherry pinned inside of lemon peel and rested across rim.
