Lisa Giffen Becomes Head Chef At Brooklyn's Maison Premiere

Chef Lisa Giffen has been in the kitchen at Maison Premiere, the classy and stylish two year-old French Quarter-inspired restaurant and oyster bar in Brooklyn, N.Y.'s Williamsburg neighborhood, since they launched their dinner menu last year, and has now been elevated to the head chef position, according to a release.

Prior to joining the team at Maison Premiere, Giffen worked in some of the city's top kitchens, including  Adour Alain Ducasse, Daniel, and Blue Hill.

When the restaurant first opened, its menu was largely focused on oysters, but since then it's slowly expanded, and with Giffen at the helm it's gotten its largest expansion yet. She will focus on giving the menu an authentic Creole slant, and has already added some new dishes, including Louisiana crawfish bread with horseradish remoulade and Creole spices, and cod brandade.

She's also rolled out a "Large Plates" section, with dishes including turbot with seaweed and clams, pigeon with turnips, foie gras, and star anise, and rabbit with spaetzle and mushrooms.
