INGREDIENTS

For the lemon-almond honey:

  • 1 tablespoon rosemary, chopped
  • 1 teaspoon honey
  • 2 tablespoons almonds, chopped
  • Zest and juice of ½ lemon
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • One 4-ounce log goat cheese, softened

For the smoked bacon and sage :

  • 2 slices bacon
  • 1 tablespoon fresh sage
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • One 4-ounce log goat cheese, softened

For the mushrooms:

  • 2 pints cremini mushrooms, stemmed
  • 2 tablespoons olive oil

DIRECTIONS

For the lemon-almond honey:

Combine all of the ingredients in a bowl and mix thoroughly with a fork to combine.

For the smoked bacon and sage :

Chop the bacon into small pieces and pan-fry in a skillet over medium-high heat until brown, about 5 minutes. Remove and drain on a paper towel. Add the sage to the bacon grease and cook for 2-3 minutes, until it begins to crisp. Remove from the pan. Combine all of the ingredients in a bowl and mix thoroughly with a fork to combine.

For the mushrooms:

Preheat the oven to 375 degrees.

Arrange the mushrooms in a roasting pan. Drizzle the mushrooms with the olive oil and rub thoroughly to coat. Stuff ½ of the mushrooms with the lemon-almond honey mixture, and stuff the remaining mushrooms with the smoked bacon and sage mixture. Transfer to the oven and bake for 30 minutes. Remove from the oven and serve warm.
