With all the talk recently about bacon jam, it should be noted that there are some other interesting spreads appearing on burgers: okra & bacon relish, chipotle aïoli demi, maple aïoli and cherry-jalapeňo jam. And just when I note that arugula seems to be the green of choice on upscale burgers, Grazin in Hudson, N.Y., raises the stakes with not just Italian dandelion greens but also peppercress as toppings. It’s tough to keep up with and nearly impossible to get ahead of the burger business’s creativity.
