INGREDIENTS
For the bitters:
- 10 ounces Johnnie Walker Double Black
- 1 star anise
- 1 cinnamon stick
- 3 cloves
- 3 strips of orange peel
- 1/2 tablespoon raisins
- 3 Jamaican allspice berries
- 1 teaspoon black peppercorns
- 1/2 Madagascar vanilla bean, split lengthwise
- 1/2 teaspoon carraway
For the Mister Roy (Smoky Rob Roy) cocktail:
- 1 1/2 ounces Johnnie Walk Double Black
- 1 ounce sweet Vermouth
- 2 dashes Hella Bitter's Johnnie Walker Double Black Bitters
DIRECTIONS
For the bitters:
Combine all ingredients in a 1-quart mason jar and cover. Then, set the bitters aside to macerate for 3-4 weeks. Patience is key!
Taste regularly to monitor the change in flavors, and once the desired flavor is reached, filter the liquid from the solid ingredients using a fine cheesecloth. Cut a square of the cheesecloth large enough to double over and cover the top of the mason jar, secure with rubber band. Gently pour the bitters into another clean vessel. Repeat straining process a few times to ensure there are no visible particles in the bitters. Once the liquid settles a bit more, some sediment may settle, that is normal.
