Individual Corn Pudding

This is a delicious and warming corn pudding recipe. Quick, simple and delicious. Goes great with grilled beef tenderloin.

 

Ingredients

1 15 oz cream corn

1 15 oz corn niblets w/water

1 box jffy cornbread mix

1 stick butter melted

1 8oz sour cream

2 eggs beaten

1 12 cup muffin tin

 

Directions

Combine ingredients together in a large bowl and mix until incorporated. Grease muffin tins with non stick cooking spreay. Ladle in muffin tins and  bake at 350 for 30 minuts. Remove and serve hot.  

Corn Pudding Shopping Tip

If you don’t have time to prep fresh corn, stores often have pre-packaged prepped corn. Frozen or canned corn work equally well also.

Corn Pudding Cooking Tip

Whenever you’re baking something, it’s best to use a stand-alone oven thermometer since some ovens run hotter and some ovens run cooler; the internal thermometer may not be accurate, especially in an older oven.
