I think that's the tastiest post title we have EVER had here on the blog, am I right?!

Churros take me right back to my childhood in Rio (no, not Mexico..) where we could buy them from street vendors filled with dulce de leche... Yes, I get all poetic when it comes to food drenched in cinnamon and dipped in Nutella sauce (more Homer drool noises...).

And since Cinco de Mayo is around the corner, I decided to have a go at making my own churros.It would be the perfect dessert to end a fabulous fiesta like we shared earlier this week. And it turns out it's mega easy to make too!
This recipe has been modified from one I found on the community forum of the Nigella site. The recipe on there wasn't tested, and when I made it; it gave a sloppy consistency, so I tweaked it. 
I also added measurements in cups to make the road to your sweet treat a LOT quicker. You're welcome! ;)

Ingredients:
For the churros batter:
* 1 cup of plain flour, sifted* 1 teaspoon of baking powder* 1 pinch of salt* 2 tablespoons of olive oil* 300 ml (10 fl oz) boiling water* oil for deep frying
For topping:
* 1/3 cup of caster sugar* 2 tablespoons of cinnamon* a jar of Nutella

Directions:
1) Mix the cinnamon and sugar for the topping in a bowl or brown paper nag and set aside.
2)  In a large bowl, add flour, salt, baking powder and mix. 
3) In a separate bowl add olive oil and boiling water. Stir, then make a well int he center of the flour bowl and add the water mixture, stirring with a fork or hand whisk until combined. The dough will be like a slightly soft bread dough and very stick to the touch, but firm enough to place into a piping bag. let it rest for 10 minutes.
4) Meanwhile, heat your deep fat fryer to 170 deg C or 338 deg F.
5) Add the churros dough to a piping bag fitted with a large star nozzle. Carefully squeeze out churros sticks (length of choice) directly into the hot oil and cut ends with a pair of scissors. Don't cook more than 3 at a time because they can stick together. 
Fry for about 3 to 4 minutes or until crispy and golden. Drain excess oil onto kitchen paper. 
6) To serve, heat up the Nutella into a microwavable bowl for about 30 seconds, until it's pouring consistency. Sprinkle churros with the cinnamon sugar and serve at once!
