Gluten Free Peanut Butter Cookies

My dad and sister both have celiac, so when I am home I like to experiment and bake things that are gluten free. One of their favorite gluten free recipes is one my mom has adapted, and they are peanut butter cookies! Not only are they incredibly easy to make, but they're delicious and alterable to add your favorite ingredients.

  • 1 1/2 cups Creamy Peanut Butter (I use all natural)
  • 1 cup Brown Sugar
  • 1 Egg
  • 2 teaspoons Good Quality Vanilla
  • 1/2 teaspoon Baking Soda
