Ingredients
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • dash of worcestershire sauce
  • 1/4 teaspoon salt
  • 6 ounce blue cheese, crumbled
  • 1 tablespoon lemon zest
  • 3 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon cracked black peppercorns
  • 1/2 teaspoon salt
  • 3 tablespoon extra-virgin olive oil
  • 3 pound chicken wings, split, rinsed, and patted dry
  • celery sticks, for serving
Directions
  1. Combine the mayonnaise, sour cream, Worcestershire, salt, and blue cheese. Refrigerate until ready to serve.
  2. In a small bowl, combine the lemon zest, juice, garlic, pepper, and salt. Slowly whisk in the olive oil until the marinade is smooth and emulsified. Place the chicken wings in a large Ziploc bag and pour the marinade over them. Press out all of the air in the bag and seal tightly. Refrigerate for 6 hours or up to overnight.
  3. Remove the wings from the marinade and shake off excess marinade. Reserve some of the marinade for basting while grilling.
  4. Grill the wings indirectly for 30 minutes until the juices run clear. Brush the wings generously with reserved sauce and grill directly over heat until crisp, basting a couple of times, about 5 minutes total.
  5. Serve with celery sticks and blue cheese dressing.
