Egg White Frittata With Goat Cheese And Spinach

Egg White Frittata
Ingredients
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1/3 cup cooked spinach, drained and chopped
  • 4 scallions, white parts only, chopped
  • 1/4 cup fresh goat cheese
  • 8 egg whites
  • salt and pepper, to taste
  • 1/4 parsley, chopped
Directions
  1. Preheat the oven to 425 degrees.
  2. Heat ½ tablespoon of the butter in a medium-sized ovensafe frying pan. Add the garlic and sauté until golden brown. Transfer to a large mixing bowl.
  3. Add the spinach, scallions, and goat cheese and stir to combine. Add the egg whites, salt, and pepper, and mix until everything is evenly distributed.
  4. Melt the remaining butter in the pan over medium heat, and add the mixture. Let sit for 2-3 minutes until the bottom sets, then place the pan in the oven. Bake until the frittata is cooked through, for about 10 minutes.
  5. Remove the pan from the oven, and use a spatula to release the frittata from the pan. Slide it off the pan and onto a platter, slice into quarters, sprinkle the parsley on top, and serve.
