Ingredients
  • ½ pound shrimp, peeled and deveined
  • 1 teaspoon dried basil
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • juice of 3 lemons
  • 3 medium avocados
  • 2 tablespoons chopped cilantro
  • ½ pound mixed salad greens
Directions
  1. Season shrimp with dried basil and salt and pepper. Set aside.
  2. Heat olive oil in the pan over medium heat.
  3. Add shrimp and cook for 2 minutes.
  4. Add garlic to pan and turn shrimp over. Cook for approximately 2 more minutes, until garlic is fragrant and shrimp are opaque and curled slightly.
  5. Deglaze pan with lemon juice. Remove pan from heat and transfer shrimp to a plate. Reserve pan drippings.
  6. Place avocados, cilantro, and pan drippings in a food processor or blender. Blend until creamy.
  7. Toss shrimp, avocado mixture, and greens together.
  8. Serve immediately.
