Designer Digs: QT Sydney Opens

QT Sydney, the result of a renovation of Sydney's historic Venetian, Gothic, and Art Deco-influenced State Theatre and the former home of the Gowings department store, has opened in Sydney's city center.

The 200-room designer hotel includes a café, bar, restaurant and spa. The hotel's food options are headed by Robert Marchetti, the creative food director. Marchetti is the restaurateur behind Sydney's Icebergs Dining Room and Bar, North Bondi Italian, and La Macelleria and Melbourne's Giuseppe Arnaldo & Sons. Paul Easson is the executive chef at the hotel.

QT Sydney's culinary offerings include Gowings Bar and Grill, a 120-seat brasserie with a strong focus on wood-fired crustaceans and seafood on rotisserie. Dishes made with locally sourced ingredients are created in the open kitchen.

Wine consultant Ian Cook has curated the 120-bottle wine list at Gowings Bar and Grill with small-batch and limited-release wines, including full-bodied, grill-friendly South Australian reds and light and dry rosé from the South of France. Labels from New Zealand, Spain, Italy, Germany, and Austria round out the list.

Parlour Lane Roasters, located on the hotel's street level, serves coffee, breakfast, lunch, and snacks. In the evening, the space is transformed into an aperitivo wine bar.

QT Sydney also has the 60-seat Gilt Lounge on level two, which serves an array of liquors and handcrafted cocktails, and SpaQ, a full-service spa.
