Jen Leeman is based in Forked River, New Jersey and is the blogger behind Driftwood Gardens. She is a mother to two children and three pets. Leeman dedicates her blog to making easy and healthy plant-based recipes. She also loves gardening, going to the beach, home improvement projects, and entertaining at home.
The Daily Meal: What is the mission of your blog?
Jen Leeman: I want to prove that vegans eat more than just salad, and that it doesn't have to be hard to eat while on a vegan diet.
How did you get started with blogging?
I started blogging as a creative outlet after I bought my home two years ago. I used to blog about home decorating and DIY projects, but over time gravitated more and more towards sharing recipes.
What are some foods you can’t live without?
Avocados and chocolate.
What are some foods you can’t stand?
Apples and raisins.
What is your proudest blog post?
This post about making tofu because I got a lot of haters to try it again.
What is your biggest blog blunder?
My photography is a work in progress, always. When I look back at some of the first posts I wrote, my photos were terrible!
What is the most memorable comment from a reader?
It may not seem like much to some, but recently a reader named Maria left this comment, “I’m not a good cook…and this was a success! Good and easy. Thank you!” It was exactly what I want to hear from my readers!
What is on your cooking playlist?
Anything by Bob Marley.
What is the best thing about blogging?
Connecting with readers.
Worst things about blogging?
Trying to come up with content when I have writer's block.
What recipe are you currently obsessed with?
Spaghetti Squash with Avocado Cream Sauce — it's heavenly!
What would even your most loyal followers be surprised to learn about you?
Until I started a vegan diet, I suffered from depression and anxiety.
