"Pleasant Surprises" Keep Fordham University Students Hungry For More

Fordham University students never know when or where a culinary treat will pop up on campus thanks to "Pleasant Surprises," a new culinary program by Fordham University Dining Services by Sodexo.

Without advanced promotion, pop-up food stations appear in the residential dining halls on both the Rose Hill and the Lincoln Center campus locations.

Led by Executive Chef Thomas Patterson, the stations provide a platform to showcase the talent of Fordham's culinary team, engage and connect with students, and add excitement and variety to campus dining.

Sometimes stations are themed – such as a campus "staycation" station which delivers students to a new city, country or cuisine without having to leave campus.

For instance, Chef Tom recently created a meal of Jerk Chicken, Cabbage Primavera & Corn Funchi from Le Taha'a Island.

"My inspiration for 'Pleasant Surprises' comes from a lot of things – the seasons, food trends, and special events," said Chef Tom. "We designed one for Breast Cancer Awareness Month and made pink 'awareness treats' like pink ribbon rice crispy treats, pink cupcakes, pink lemonade, and strawberry yogurt with pink coconut."

According to Chef Tom, the seemingly whimsical surprises involve a well-planned process with the help of his dining team.

"My favorite aspect of 'Pleasant Surprises' is connecting with the students," said Chef Tom. "That's where all the hard work pays off. Food is a great way to connect to people. It's tradition. It's culture. It brings people together."

The surprises continue throughout each semester and vary from entrees, snacks, health and wellness items, desserts and beverages. They range from plated dishes, interactive stations such as "decorating your own cookies" or a demonstration about how to build a recipe item.

"'Pleasant Surprises' has added a complete new dimension to Fordham Dining," said Deming Yaun, Fordham University Dining Contract Liaison. "Students, faculty and staff are enjoying it very much and are always looking forward to what is next.  This program is a home run in innovation, food trends, and, often, in nutrition education.  Congratulations Sodexo on a job very well done!"
