Chilled Zucchini Salad with Mint and Feta
Ingredients
  • 1 large zucchini
  • 1/2 teaspoon olive oil
  • 1/4 cup chopped mint leaves
  • 2 ounce feta cheese, cubed
Directions
  1. Slice the zucchini into paper-thin circles. Bring a medium-sized pot of water to a boil over high heat. Boil the slices for 1 minute and remove from the water. Place the slices on a paper towel, and pat them dry to remove the excess water.
  2. Put the slices into a large bowl, add the olive oil, and mix well. Add the mint leaves and the feta to the bowl and mix again.
  3. Refrigerate the salad until chilled. Serve and enjoy!
