Janina O'Leary

We've heard about breakfast for dinner, but what about breakfast for dessert? This ice cream recipe was inspired by a favorite cereal combination of Cheerios and strawberries. The combination of both tart and sweet is the perfect way to end a meal... or start the day.

INGREDIENTS

  • 2 eggs
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons whipping cream
  • 2 cups half-and-half
  • 2 1/4 teaspoons vanilla extract
  • 1 cup Cheerios
  • 1/4 cup macerated berries and purée
  • Pinch of salt

DIRECTIONS

In a heavy saucepan, combine the first 5 ingredients. Cook over medium-low heat, stirring constantly, until the mixture is thick enough to coat a metal spoon and reaches at least 160 degrees. Add in the Cheerios. Remove from the heat; cool quickly by setting the pan in ice and stirring the mixture. Cover and refrigerate overnight. When ready to freeze, strain out the Cheerios, then pour the custard and vanilla extract into the cylinder of an ice cream freezer. Freeze according to the manufacturer's directions.

Before serving, fold in the berries and purée for swirl and ¼ cup of Cheerios before to garnish.
