Fall is in the air!

Fall is in the air! I feel like I’ve been waiting forever this year for fall to come around! I’m so happy it’s finally here! I’m usually not one to rush the seasons, but this summer, I was big and pregnant, and it was a superrrr hot one for the PNW, so I was craving some cool, crisp, fall air!

The first morning I woke up and had to throw on a sweater because the house was so chilly from the night air, I was ecstatic. I was ready for PSLs, apples, boots, sweaters, and all things fall at the beginning of August!

One of the things I miss the most about living on the west coast though, is how different fall is here compared to the east. The air isn’t as crisp, the leaves don’t really change to all the stunning colors that New England sees, it just feels so different.


But! It doesn’t stop us from participating in all of our favorite fall activities! Apple picking, pumpkin carving, loads of baking-making the house smell heavenly, for example, making these caramel apple oatmeal cookies!

I love cookies all year round, but when I’m pregnant, I crave them constantly! These cookies are big, almost bakery style, so soft and chewy, loaded with oatmeal, which is how I like it, full of spice, and they just taste like fall. (I loved them so, so much, I even have a pumpkin version I’m sharing soon!)

These apple spice cookies have a honking piece of gooey caramel in the center of them, and it’s like the icing on the cake! So melty and warm, fresh out of the oven!

I store these in a ziplock bag on the counter, and because the caramel can harden a bit once they cool to room temp, I just wrap a cookie in a paper towel and pop it in the microwave for 10-12 seconds to soften the caramel again, works like a charm!

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon molasses
  • 1 teaspoon cinnamon
  • 2 tablespoons apple pie spice
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old fashioned rolled oats
  • kraft caramel squares


  1. In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars on medium speed for 3-4 minutes.
  2. Scrape down the bowl, and mix in the eggs one at a time. Stir in the vanilla and molasses.
  3. In a separate bowl, whisk together the flour, cinnamon, apple pie spice, baking soda, and salt. Add the dry ingredients into the wet ingredients, and mix until just combined.
  4. Scrape down the bowl again with a rubber spatula, and slowly mix in the rolled oats.
  5. Preheat oven to 350°, unwrap about 16 caramels, line a baking sheet with parchment paper.
  6. Using a large cookie scoop, scoop out a mound of dough, pull it apart, insert a caramel in the middle and press the dough back together into a slightly flattened ball. Place on a baking sheet, 2 inches apart, and repeat until all your dough is gone.
  7. Bake for 10-12 minutes, until the edges are golden brown, its okay if the middles look slightly undercooked, they will finish cooking on the pan as they cool.
  8. Allow to set for 5-7 minutes before transferring to a cooling rack. Once completely cooled, store in a large ziplock bag on the counter.



  • Sometimes with these caramels, they harden back up once cooled, I like to throw mine into the microwave for 10-12 seconds to soften them up! Plus warm cookies bring out the apple spice so much better
