This recipe was inspired by a spiced pecan recipe and helps to fulfill my desire for pecan rolls or cinnamon rolls or both combined! And I don’t miss the bread part at all. With this you have all the richness and flavor, more for your palate to enjoy. And evidently, pecans are also rich in anti-oxidants. When roasted, they taste like cookies to me!

Ingredients
  • 1/2 pound pecans
  • 1 tablespoon clarified butter
  • 1/8 teaspoon himalayan salt
  • 1/4 teaspoon sweet leaf stevia
  • 1 tablespoon cinnamon
  • 1/4 teaspoon vanilla extract
Directions
  1. Preheat the oven to 350 degrees.
  2. In a small bowl, combine the salt, Stevia, cinnamon, and vanilla extract. Set aside. Roast the pecans for 10-15 minutes, just to give them a slight toast. Melt the clarified butter in a saucepan large enough to hold pecans. Sauté the pecans for 5 minutes, then toss with the seasonings and stir to coat. Let cool before serving and refrigerate for later use.
