Blueberry Mint Shrub: Pink Summer Cocktails

Drinking vinegars, known as shrubs, can make pretty and delicious summer sunset cocktails. Add a splash of shrub to your standard vodka tonic to make the typical sublime.   Great as summer party hostess gifts too- who wouldn't love heavenly bottles of elixir?

Ingredients
  • 2 cup crushed blueberries
  • 2 cup white sugar
  • 3 sprigs of fresh mint
  • 1 cup cider vinegar
Directions
  1. To make the shrub: combine the crushed fruit, sugar and mint in a bowl, cover and let macerate on the counter for at least 24 hours.
  2. Strain syrup through a sieve, pressing on the solids to extract all the juice, and discard the solids.
  3. Stir in the vinegar and bottle.
  4. May be stored at room temperature, but I store mine in the fridge.
  5. Bluberry Mint Cocktail:

  7. Over ice combine:
  8. 3T gin
  9. 2T blueberry mint shrub
  10. 1T simple syrup
  11. top off glass with sparkling water and garnish with sprig of mint
