Drinking vinegars, known as shrubs, can make pretty and delicious summer sunset cocktails.
Add a splash of shrub to your standard vodka tonic to make the typical sublime.
Great as summer party hostess gifts too- who wouldn't love heavenly bottles of elixir?
INGREDIENTS
- 2 cups crushed blueberries
- 2 cups white sugar
- 3 sprigs of fresh mint
- 1 cup cider vinegar
DIRECTIONS
To make the shrub: combine the crushed fruit, sugar and mint in a bowl, cover and let macerate on the counter for at least 24 hours.
Strain syrup through a sieve, pressing on the solids to extract all the juice, and discard the solids.
Stir in the vinegar and bottle.
May be stored at room temperature, but I store mine in the fridge.
