From most recent book. Haven't tried A traditional Spanish dessert, flan is a creamy custard baked with a sugar based caramel, which creates a toasty tasting sweet sauce. In this version, sugar free maple syrup is drizzled on top to create a similar effect. The maple taste is the perfect complement to toasted silvered almonds.

I was looking for a Spanish dessert to make for a dinner party with friends and didn't want to go the typical/expected flan route. I found a few recipes online that inspired this final outcome. You will be so pleasantly surprised how subtle the olive oil flavor is and how wonderful it is in a dessert :-) Note: This is not the time to be cheap in your choice of olive oil because whatever your olive oil tastes like will directly reflect how your ice cream tastes.
