Osso buco
This dish combines traditional Italian osso buco flavors with Anguilla’s tradition of making stews. The concept came from the members of our kitchen staff here at CuisinArt Resort & Spa who grew up on the island; they noticed my seasoning, sautéing vegetables, adding water, and cooking for 90 minutes, and then adding the meat, like you would when making a stew.Fungi is a cooked cornmeal paste, very similar to polenta, that is well-loved in the Caribbean. Chef La Guenan substitutes in traditional polenta in this recipe.

Osso Buco
"Elderflower and tarragon are both ingredients that I grew up with; my mother has always grown tarragon in her garden that we use for cooking, vinegar and preserves. And the excitement is always high when the elder bushes start blossoming along the roadsides in Denmark, and then when it’s time to pick the flowers to make cordial."-Trine HahnemannRecipe Courtesy of Trine Hahnemann from her cookbook Scandinavian Comfort Food. Slow-Cooker 'Osso Buco' Stew
Based on the Milanese dish osso buco, this Slow Cooker Osso Buco stew is what I like to think of as “quietly Italian.” Unlike a basil-and-tomato based dish with bold flavors that punch you in the face like the Godfather, this stew is gentle, subtle, and smooth. It’s traditionally made with veal shanks, white wine, vegetables, herbs, and a little tomato. This version substitutes cubes of stew meat — and if you’d like, you can use beef instead of veal — but don’t skip the lemon zest and parsley as garnish! — Melissa Joulwan, author of Well Fed and paleo food bloggerFor more great recipes like this one, visit meljoulwan.com.
