I've been using nettles lately and found this recipe on the internet but not sure where. It looks really good and would be great served over pasta.

I love nature. But nettles are hard to love. To pick you must be covered from head to toe. They are so good for you that they are worth it. This soup is great for when you have cold.

I'm giving my hubby credit for this recipe because he picked the nettle and cleaned it. You have to be very careful when handling this herb. It has little hairs that can irritate your skin, so if you pick it wear rubber gloves or cut it with scissors and use tongs. Once it's cooked or juiced the sting goes away and you can enjoy the wonderful taste. I served this with garlic toast.

Don't worry - they don't sting when cooked! Nettles are very nutrient rich and of course - free! Don't gather them beside a busy road where they will have been contaminated by traffic fumes - we pick them in our garden. If you keep cutting them from springtime you get a regular supply of fresh leaves. Though we stop using them into summer as they seem to get rather insecty!

Wild nettles may be regarded as a garden nuisance by some, but they are highly nutritious and a Mediterranean delicacy. While Melissa used nettles (they must be cooked first), we substituted baby spinach.

At Manka's Inverness Lodge, in Inverness, California, chef Daniel DeLong uses local wild stringing nettles to give a tangy flavor to this light, creamy soup. Because nettles are prickly, use gloves while working with them. If nettles are unavailable, substitute fresh spinach or a combination of parsley and sorrel.

Nettle soup has long been eaten as a spring tonic; look for nettles at farmers’ markets throughout the spring and early summer.

This is a dense and delicious dark green nettle soup. Make it when nettles show up at the farmers markets in the Spring. Be sure to wear gloves when handling the nettles or they'll sting ya!
