Adopted from australians womans weekly, havn't tried this yea, but it looks very tasty and my cousin did recomend it to me, so it must taste great because she is a fussy eater

These are great to take camping, or for your backyard BBQ! They can be made the day ahead, and kept in the fridge til needed.

In an internet quest for the recipe for Brie-mashed potatoes, I came upon these little gems. I was only baking for two, so only used two potatoes, however, I forgot to scale down the remaining ingredients, which were slated to feed four (using 4 potatoes). My husband and I both agreed that these were the best things upon the plate tonight. From igourmet.com. Prep/Cook time does not include time for baking the potatoes.

Use whatever mushrooms you can get, but a mixture of cremini, shiitake and oyster is recommended. If you use vegetable broth, this is vegetarian; if you forgo the butter, it's even vegan. Adapted by Nick Kindlesperger (at Serious Eats) from a recipe in _Food and Wine_

The nicest thing about jacket potatoes is its crisp, crunchy skins and fluffy, floury insides with some lovely filling melted into them! As an accompaniment, one half of the potato will be sufficient per person, or 1 potato per person if serving as a supper dish with a salad. Please note, you will have to serve them immediately because, after you remove jacket potatoes from the oven, they lose their crispness very quickly, so don't let them hang around for too long.
