Well, what can I say - it's healthy! Which is a good thing, A salad enjoyed before the main course, or even during a main course is a nice way to balance a meal, but it's even better when you're always trying different combinations of vegetables and dressings to se which you like best. Cook time includes refrigeration.

I found this recipe a couple of years ago in a book on diabetes control. Its really good and good for you. Its the only salad dressing we use. My husband likes it with hemp oil but I prefer the flax seed oil. I keep a bottle of both in our fridge. Its easy to double the recipe. The liquied lecithin helps keep in emulsified...I recommend it. You can find it a health food stores.
