My very good friend Anna gave me this recipe (which I slightly adapted) from Insalata's, an upscale Mediterranean venue, located in San Anselmo, California, about twenty minutes north of the Golden Gate Bridge. She had this salad there and really enjoyed it. I have to say it's one of the best salads I have ever had. I served it along side some grilled lamb chops... perfect!

Fattoush is a popular salad in Lebanon made with mixed greens, a lemony vinaigrette and pita bread pieces. Toasting the pita adds crunch and a sprinkle of ground sumac—which grows wild all over Lebanon—adds depth. Let the salad sit for a bit to let the pita soak up the lemony dressing.

This Middle Eastern Fattoush-Lebanese Bread Salad is a very nice change from a basic salad... and this recipe is extra special because it is made “My Way.” I have added black & green pit less olives, grape tomatoes, chickpeas and creamy cheese pieces coated with a nice blend of herbs… and with a little tahini sauce around the side of the dish.. Enjoy!

This is a great way to feed lots of your friends while the main course is cooking I make this when we go camping and the meat will be cooking slowing this travel well and is quite filling.....hope you enjoy

Fattoush means "moistened bread', it's of Syrian or Lebanese origin, I found this great looking salad in the "Fresh" magazine from my grocery. Chickpeas have been added for protein.
