Chestnuts
This rich velvety soup is a wonderful way to begin this festive meal.  If you can find jarred or frozen peeled chestnuts, it will cut down on your preparation time considerably.  If using fresh chestnuts, see the preparation instructions following in this recipe and plan to prepare them in advance. (Peeled chestnuts are sold at Asian markets at a fraction of the cost in supermarkets.) For a thinner but still rich soup, add up to one cup of almond milk close to serving time.Adapted from "Party Vegan" by Robin Robertson.

Chestnut Cake with Pan-Roasted Pears
To me, the perfect brunch dessert is one that is not too sweet, not too rich, and especially not too chocolaty — this chestnut cake fits the bill! Served with warm pan-roasted Bartlett pears and a little chestnut honey syrup, it’s absolutely enchanting and even a little addictive. The cake should be prepared one day ahead, as its texture will improve with a little rest. All that remains to be done before serving is to pan-roast the pears and make the syrup, which only takes a few moments.

There's nothing like a warm and cozy chestnut soup to brighten up a cool evening. You can use fresh or frozen chestnuts, whatever is available to you. The flavor of chestnuts is enhanced by applewood-smoked bacon, and classic French flavors of garlic, thyme, and bay leaf lighten up the soup. See all soup recipes.
