Mushroom Calzone
This is another recipe inspired by the delicious, fresh mushrooms my dad gathers on his "mushroom hunts" at home in Northern California. At the peak of chanterelle season, we often have a surplus of the woody, flavorful mushrooms around the house and they pop up in everything from lasagnas to risotto to pizza. I couldn't find chanterelles at this time of year in New York City, but if you can get a hold of them, I would absolutely recommend adding them into this calzone for an extra level of flavor. Calzone di Nutella Recipe
A unique, Italian-inspired dessert, prepared by Chef Chris D’Amico of the restaurant Gemma at The Bowery Hotel, consists of a flaky calzone dusted with sweet powdered sugar and stuffed with rich Nutella and creamy ricotta. Perfect for sharing with a party of two or more. Highly recommended with milk.

With Nutella being one of Italy's most proud creations, what better way to celebrate it then with a traditional Italian calzone? Creamy ricotta is mixed into the filling to make a sweet filling to the well-liked calzone.

When you make this recipe for the first time, you’re going to serve up these little pillows of fresh pasta dough filled with brown buttery butternut squash purée and everyone’s going to stare at you. They’re going to look from you back to the plate and back to you and they’re going to be thinking, "How in the world did [insert your name here] make this?" What you’ll know that they won’t is, really, once you get the pasta-making technique down, the rest is shockingly easy. I suggest making the filling first and the pasta dough second so the dough doesn’t dry out. And make lots and lots of pasta, more than you think you’ll need, because whatever you don’t boil now, you can freeze for later. Then, whenever you want to awe dinner guests with your culinary prowess, you just have to open your freezer and boil some water. The rest takes care of itself.

Calzone has the same flavors as pizza, but it is made like a huge turnover with the meat, sauce and melting cheese sealed inside. It can stand alone as a substantial snack, or, combined with a green salad and soup, it makes an easy supper.
