Bison sausage taco.
To paraphrase the Talking Heads, "And you may find yourself with a bison sausage pack, and you may find yourself in strange cooking situation, and you may find yourself behind the edge of a large outdoor grill, and you may find yourself in a beautiful house, with a beautiful wife, and you may ask yourself, how do I make bison sausage tacos?" Well, you might. I did, and while I make no claims to making authentic bison sausage tacos the way my Mexican grandmother did, I can tell you that if you should find yourself with a package of bison sausage, this would be an excellent way for you to use them — if you wanted to make tacos... and listen to the Talking Heads. Bison meat is known to cook faster than beef, and the best way to do it is low and slow, making it a great choice for a traditional stew recipe. Red wine and beef broth, flavored with simple aromatics like onion, carrots, celery, and garlic, is the perfect broth for tender bison brisket.

Enjoy steak fajitas without the guilt by choosing bison flank. One of the leaner cuts from bison, the flank steak is great when marinated in Southwestern flavors like chili powder, paprika, cumin, and garlic powder, and seared over the open flame of a grill.

Bison and Black Bean Chili
Bison, as many of you have now seen, can be readily found in most grocers next to the ground beef. For those unaware, bison has less fat, calories, and cholesterol than beef, while also promoting a denser concentration of protein, iron, and B vitamins. Still not convinced? Bison has a rich beef flavor, similar to that of grass-fed, organic beef. Quite frankly, I've served this chili to many of folks who never knew the difference. Of course, a good bold chili is a great way to introduce new meats to those unfamiliar. Reminds me of the time I served up a heaping bowl of squirrel chili to a group of sorority girls... kidding. But, you get my gist. Anyways, here's my recipe for an outstanding, healthy (sans the cheese and sour cream) Bison and Black Bean Chili. See all chili recipes. The best part about tender cuts of bison, like its skirt steak, is that they still hold the rich, intense flavor of the meat but do great with seasonings, too. This recipe seasons skirt with soy sauce, lime juice, and cilantro, and sears it to perfect. Diced up and piled with cheese over crispy tortillas, and it becomes part of some of the best nachos you’ve ever had.
