Ingredients
  • 1 large avocado
  • egg
  • 1 tablespoon water
  • 1 cup panko or italian-style breadcrumbs
  • 1/2 cup flour
  • 1/4 teaspoon cayenne pepper
  • salt and pepper, to taste
  • 4 slices bacon, cut in half
  • canola oil, enough for 1-inch in your frying pan
Directions
  1. Peel, pit and slice avocado into 8 equal wedges. Place wedges on a plate, cover with plastic wrap and freeze for 20 minutes. In a shallow dish, whisk together the egg and water. Place breadcrumbs and flour into two separate dishes or plates. Season the flour with cayenne, salt and black pepper.
  2. Once the avocados have chilled, take each wedge and dredge in flour. Shake off excess and dip into egg wash. Roll wedges in breadcrumbs. Take a 1/2 slice of bacon and wrap it around each wedge of avocado. Secure with toothpicks. Place back onto plate and freeze for another 10 minutes. Fill a heavy bottom pan with 1 inch of oil. Heat until the oil reaches 350 degrees F. Fry avocado fries for 3-4 minutes, turning as they become golden. Remove from oven and drain on paper towel. Season with salt and discard toothpicks.
