Making a grilled cheese sandwich doesn't have to be a complicated affair. Find a cheese that melts well (Jarlsberg); find some bread you like that will work on a griddle, grill, or hot pan (so… maybe not challah); and maybe some toppings that you like (bacon) but not too many, and you're all set. It's not rocket science, which is why it's the savior of so many folks who have had a little too much fun on their night out with friends. OK, not everyone has Jarlsberg sitting around in their refrigerator all the time. But you get the point. There are only three ingredients in this recipe, but it does get a bit clever, using the bacon fat to flavor up the bread. Bacon and Jarlsberg Grilled Cheese Sandwich
Ingredients
  • 5 slices bacon
  • 4 slices jarlsberg
  • 2 slices whole-wheat sourdough or regular sourdough bread
Directions
  1. Heat a cast-iron skillet or griddle over medium heat. Add the bacon and cook until just crisp on both sides. Remove the bacon from the pan. Place the cheese and bacon in between the 2 slices of bread and toast in the pan on both sides until the bread is nice and brown and the cheese is melted.
