  • 4 ​ ripe avocados - diced
  • 1 sweet potato - baked
  • 1 red onion - charred
  • 2 tablespoon lime juice
  • 2 ounce sour cream
  • 2 ounce olive oil
  • 1 teaspoon sea salt
  • 1 pinch​​ nutmeg
Directions
  1. Preheat oven to 375º Place whole sweet potato into oven baking for 35-40 minutes until fork tender. Put broiler setting on low. Slice onion into 1/4 inch thick slices. Place onto sheet pan and broil for 10-12 minutes. Onion is ready when tops are slightly charred. Once onion is cool rough chop and set aside. In a bowl place diced avocado, lime juice, diced cold sweet potato (1/2 inch cubes) and charred onion slices. Drizzle with olive oil and mix all ingredients together. Season with sea salt and a pinch of nutmeg. Garnish with dollop of sour cream and diced red onion. Serve with dried fruit (pineapple), plantain chips and/or pita points.
