Fall is the time for apple cobbler — and by apple cobbler, we mean a sparkling wine-based cocktail with hints of cinnamon and orange. Ours is made with Jaillance Clairette de Die sparkling wine from France and Amontillado sherry. The recipe was developed by Brooklyn mixologist Katie Stipe.

Ingredients
  • 3 orange slices
  • 1/2 ounce simple syrup
  • 2 ounce dry amontillado sherry
  • 3 ounce jaillance clairette de die
  • freshly grated cinnamon
  • cinnamon stick
Directions
  1. Muddle 2 orange slices in the simple syrup; add the sherry. Dry shake ingredients and strain over crushed ice in a Collins glass. Top off with the Jaillance Clairette de Die. Finish with the cinnamon, cinnamon stick, and orange slice.
