Austin's Qui Slated To Open June 20

James Beard Award-winner Paul Qui (of Top Chef season nine fame) has just announced the opening date of his much-anticipated restuarant Qui, slated to open June 20.

The restaurant, which has created much industry buzz, will hold 60 seats total (50 seats for the main dining room, 10 seats for the Tasting Room), not to mention a menu inspired from travels across America; San Sebastian, Spain; France; Copenhagen; Mexico City; Vietnam; and Japan.

"I want to create a space where the possibilities for my cuisine are limitless," Qui said in a press release. "I'm inspired by our surrounding community, as well as by exploring those boundaries beyond Austin and Texas. I enjoy learning from different creative outlets including food, but also art and design, all of which will be incorporated at qui."

Menu dishes will include "Salmon Butter" (salmon poached in oil until it's the texture of butter); "Rabbit 7 Ways," featuring French, Thai, and Vietnamese preparations; plus "Street Urchin," with Mexican street corn and a sea urchin bottarga that we kind of want right now.

As for desserts, the press release says to expect Filipino-inspired dishes like Mais con Yelo (milk ice, corn milk, and chocolate leche flan), coconut snow cones with cinnamon custard, plus a Cheddar cheese ice cream sandwich (say what?!). Check out the promo video below.
