Armenian Food Recipes

                If ever you wanted to eat something different and unique for a meal, have yourself a wonderful Armenian experience. The Armenian cuisine is a unique blend of spicy, stuffy, vegetables and fruits delicacies cooked and prepared using a mixture of different cooking styles from all over the Middle East and Europe. So, if ever you are interested in preparing yourself some sumptuous meal, here are some famous Armenian recipes.

Basterma (Armenian salted dried beef prepared all year but is prepared especially during the winter.)

Main Ingredients:

  • 1 slice of beef (2 lbs.)
  • ¼ cup of bagged salt

Chaimen Mixture Ingredients:

  • 3 tbsp chaimen
  • 2 tbsp paprika
  • ½ tsp red pepper
  • ½ tbsp black pepper
  • ½ tsp salt
  • ½ tbsp kimion (cumin)
  • ½ tsp allspice
  • 3-4 cloves of garlic, crushed
  • 1 cup of water

Instructions:

Step 1: Select tender cut of Beef from the rib part. The cut must be about one and a half inch thick, and is anything near the length of 8 inches. Insert heavy string through one end and make a loop.

Step 2: Rub the meat with salt and let it stand in the refrigerator for 3 days placing a heavy item on top and turn the meat upside down once a day. Wash the meat well with cold water and leave in clear water for one hour. Drain and press between towels to remove moisture. Continue until the meat is quite dry. Hang the meat in cool airy place to dry about two weeks.

Instructions for Chaimen Mixture:

Step 1: Combine all the ingredients listed above for the Chaimen mixture, adding water a little at a time to make thick paste.

Step 2: Soak the meat in the Chaimen mixture for 2 weeks.

Step 3: Hang the meat in an airy place for 2 more weeks. After this, the meat may be cooked or used immediately or be frozen until time of use.

ARMENIAN SANDWICHES

Ingredients:

  • 2 lg. rounds of Armenian cracker bread (if none, use any cracker bread available in your area)
  • 3 tbsp of low-calorie mayonnaise
  • 3 tbsp of Dijon-style mustard
  • 2 oz. of Neufchatel cream cheese, softened
  • 1 c. sliced cucumber
  • 1 c. sliced tomatoes
  • 1 c. shredded leaf lettuce
  • 2 tsp herbal salt substitute

Instructions:

Step 1: Place one cracker bread on a clean damp dish towel. Spray the surface of the bread with a plant mister filled with water, until you can see a light glaze of water on the surface of the bread. Cover with another damp towel, and then pile the second cracker bread on top. Mist that one and cover with two damp towels. Every 10 minutes, remove the towels, turn the breads over, mist them again, and then replace the layers of towels. Repeat this for 20 minutes or until both crackers is soft enough to bend without tearing or cracking.

Step 2: In a small bowl, combine the mayonnaise, the mustard, and the cream cheese. Spread a strip of this mixture across the centre of one cracker bread. Place a row of cucumbers, tomatoes and lettuce on top of the spread, and sprinkle with herbal salt. Starting with the end closest to you, roll the bread tightly, as if rolling a sleeping bag.

Step 3: When in the edge of the cracker bread, seal roll it with an extra dab of cream cheese. Roll the bread and secure the roll with a toothpick. Repeat this process until you have enough bread rolls.
