Apple, Pancetta, And Sharp Cheddar Grilled Croissant

I love grilled cheese sandwiches and have since I was little, and it meant nothing more than a slice of American cheese between two slices of Wonder Bread. This time, I wanted to make something using sharp Cheddar combined with apples, as those two are such classics together. The result? A fabulous grilled cheese with pancetta, Cheddar, and apples on a croissant.

Ingredients
  • 1 tablespoon mayonnaise
  • 1 teaspoon whole-grain mustard
  • 1/2 teaspoon honey
  • 1 tablespoon dried cranberries, chopped
  • 2 slices pancetta
  • 2 teaspoon unsalted butter
  • 1 large croissant, halved
  • 2 slices sharp cheddar
  • 1/2 apple, cored and sliced
Directions
  1. In the bowl of a food processor or using a blender, blend together the mayonnaise, mustard, honey, and dried cranberries and set aside.
  2. Preheat a pan or griddle on medium heat. Add the pancetta and cook until browned and starting to crisp. Drain. Wipe down the pan or griddle.
  3. Melt 1 teaspoon of the butter in the pan or griddle over medium heat. Place the cut edges of the sliced croissant face down until slightly toasted, about 1 minute. Remove from the pan.
  4. Melt the remaining butter in the same pan or griddle and place the heel of the croissant in the pan, toasted side facing up. Layer 1 slice of the cheese, the apple slices, pancetta, and the second slice of cheese on top of the croissant. Spread the cranberry spread on the crown of the croissant and place it on top of the other ingredients.
  5. Reduce the heat and cover the sandwich with a lid or aluminum foil until the cheese starts to melt, carefully watching the underside so as not to burn. Carefully flip the sandwich over and repeat. Remove from the heat, cut in half, and enjoy.
