Here's a fantastic pie from Tate's Bake Shop, located in Southampton. The balanced combination of tart filling and sweet crunchy topping in this apple crumb pie is excellent. Ingredients
  • 2/3 cup granulated sugar
  • 5/8 cup all-purpose flour
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 5 cup apples, peeled, cored, and sliced
  • one 9-inch unbaked pie shell
  • 1 tablespoon lemon juice
  • 4 tablespoon salted butter, chilled
  • vanilla ice cream, for serving (optional)
Directions
  1. Preheat the oven to 375 degrees.
  2. Combine 1/3 cup of the sugar, 2 tablespoons of the flour, nutmeg, and cinnamon in a small bowl. Add the apples to this spice mixture and toss the ingredients together. Spoon the apple mixture into the prepared pie shell. Sprinkle the filling with fresh lemon juice and set it aside.
  3. Combine the remaining flour, sugar, and butter in a small bowl. Using a pastry blender, mix the ingredients until they are crumbly. Sprinkle the crumb topping evenly over the apples.
  4. Bake the pie for 1 hour or until the crust is golden. Remove the pan to a wire rack to let it cool. Serve the pie with vanilla ice cream, if desired.
