The pumpkin ales have long disappeared off the shelves, and a new seasonal king is ruling the market: the holiday ales. These limited-edition beers have all the fixings for the season, with sweet spices and robust malts and hops for the dark beers we grow to love.

What are the sure-fire ways to winterize a brew? Spices like coriander, orange, cinnamon, and allspice (some of the same ingredients found in pumpkin ales) give the seasonal beers something of a hot toddy or spiced cider essence. Heck, there's even a fruitcake ale on the shelves, from craft brewer Karl Strauss. But other beers come with chocolate malts (like the Weyerbacher Winter Ale), or Florida orange honey blossom (like the Swamp Head Brewery Hoe Hoe Hoe). And you can't go wrong with a very pun-intended Yellow Snow IPA from Rogue Ales, known as a pale-yellow, hoppy brew.
