6 Soup Recipes For Your Rainy Spring Days

Along with warmer weather, fresh flowers, and a bounty of seasonal produce, there's another thing that we can expect come springtime: rain. As the Earth gears up for summer after a long, cold winter, it's prone to give its land a shower or two, making the ever-popular expression "in like a lion, out like a lamb," applicable to spring every time the season rolls around.

When it's nice out, it's fabulous, and we can't wait to get outside — we fire up our grills, pay visits to farmers' markets, and picnic outdoors as often as we can. But when it rains, a brisk chill runs through the air, and all we want to do is curl up on the couch inside.

We know the feeling all too well, and while we can't make the rain go away, we can certainly put our time spent inside to good use by whipping up a batch of hot, delicious soup for some comfort. Easy, beautiful, and flavorful soups made from the best of what spring has to offer are the perfect escape from a wet and dreary day.

Take Sara Moulton's spring dumpling soup, made with fresh fava beans, asparagus, and white mushrooms, light enough for the early spring but still warm and soothing when we need it. Or try a cool and creamy chilled avocado soup, given just the right amount of heat to warm you up with seared chipotle shrimp, or a hot and sour soup in an earthy mushroom broth. No matter what soup you're in the mood for, these seasonal recipes will help you get inspired, and might even make you enjoy a rainy day or two.
