'500 Soups' For All Seasons

Looking for a basic cookbook filled with delicious soups? Then look no further than Susannah Blake's 500 Soups (Sellers Publishing, $18), which features the classics —minestrone, cream of tomato, and chicken noodle soup, of course, as well as more sophisticated fare, including ribollita, mulligatawny, and avgolemono.

Each soup recipe comes with simple variations and twists to try, featured at the end of each chapter in the book. For example, Blake offers several variations on classic vichyssoise — with garlic and chive toasts, extra-creamy, and with fresh mint — enough to keep every soup lover entertained throughout the season.

But soups aren't just for cool weather; Blake's special section just for chilled soups means that you'll get mileage out of this book in the summer, and exotic recipes like laksa and harira keep readers coming back for more throughout the year.
